Scientific Name: Piper nigrum Family: PIPERACEAE. Common Name: Pepper

The pepper plant is a tropical creeper which can grow to 10 m. The leaves are simple, oval, alternating; Its tiny flowers are grouped in hanging spikes; The fruit is a bay the size of a small currant, whose color changes from green to red as it ripens. The fruit contains one grain. It is originated from Tropical Asia, Eastern India and Indonesia.
The plant grows will in a warm, humid, tropical underbrush. It can be propagated by cuttings and grown in warm humid greenhouses. Its blooming period is May and June.

The pepper essence can be extracted by either volatile solvent extraction or steam distillation resulting a resinoid. This resin contains spicy amides such as piperin and piperettine. It has Aromatic and spicy odors.
